TERIYAKI SAUCE
½ C low sodium soy sauce
¼ C water
2 TBSP red wine vinegar
2 TBSP brown sugar
2 TBSP white sugar
2 TSP minced garlic
1 TSP ground ginger
1 TBSP corn starch
2 TBSP warm water

GROUND TURKEY
1 TBSP olive oil
½ C diced onion
2 TBSP minced garlic
1 lb ground turkey
1 C finely chopped broccoli
2 large grated carrots
2 green onions diced, for garnish
4 cups cooked white or brown rice and/or lettuce.

Directions:
Directions:
1. Mix soy sauce, 1/4 C water, red wine vinegar, sugars, garlic and ginger in a small saucepan over medium heat and whisk until sugar is dissolved.

2. In small bowl whisk together corn starch and water.

3. Heat sauce over med/high heat. Slowly whisk in cornstarch mix and simmer until thickened. Remove from heat and set aside.

4. Heat oil in large skillet and cook onions until soft.

5. Crumble turkey and garlic into pan and cook until turkey is half cooked. Add carrots and broccoli and cook until turkey is no longer pink.

6. Pour teriyaki sauce over turkey mixture and stir. Simmer for about 5 minutes to combine flavors.

7. Spoon meat over rice or into lettuce cups and garnish with green onion if appropriate.

Preparation time is 20 minutes. Serves 5. I double the recipe!

Towards the end of this summer, we all were looking to eat a little healthier and I came upon this recipe and tried it. It reminded me of P.F. Chang’s lettuce wraps that I love!
