2 cups sugar
2/3 cup shortening
3 eggs
3 tsp baking powder
3 cups flour
1 1/4 c milk
1 tsp vanilla

sugar for top of cakes

Directions:
Directions:
Combine sugar, shortening and eggs in a large mixing bowl. In a small bowl, combine baking powder and flour. In a third bowl, combine milk and vanilla. Alternately add flour mixture and milk mixture, a third at a time, to creamed sugar mixture. Mix well. Divide batter into 3 small pie pans and and sprinkle tops with sugar. Bake at 350 degrees for 30 minutes.

A recipe from my mother in law, Jean Sickonic and another one of Dan's favorites - we all loved these little cakes. Jean gave me a set of 3 small pans to bake these cakes in - I believe they were pans from a bakery.

These cakes are nice to make and share. Good for breakfast or a treat any time.
