1 bunch spinach, torn into bite-size pieces
1 head lettuce, torn into bite-size pieces
1 pound bacon, fried and crumbled
1 cup cottage cheese
3/4 cup sliced mushrooms
3 cups grated Swiss cheese or Monterey jack cheese

Dressing:
1 1/2 cups oil
3/4 cup sugar
1 teaspoon poppy seeds
3/4 cup red wine vinegar
1 1/2 teaspoon salt
3/4 teaspoon dry mustard
1/2 red onion, cut into slices (you can add this as slices in the salad instead of blending in the dressing, but leave 1 1/2 tablespoon behind to blend with the dressing)

Directions:
Directions:
1. Blend dressing ingredients in a blender then put in the fridge to chill while cooking the bacon.

2. Cook bacon and drain fat, then crumble to pieces.

3. Rinse off spinach and lettuce, then add bacon, cheese, and cottage cheese.

4. Add dressing and serve immediately.

***If you marinate the mushrooms and red onion in the dressing for 2 hours ahead of time, it makes it that much better!!! When ready to eat, just scoop out the mushrooms and onions and place in with the remaining salad ingredients and drizzle the dressing on top. Serves 8-10
