Chicken

4 boneless, skinless chicken breast halves
salt and pepper
½ c butter, melted
½ c dry Italian -seasoned bread crumbs
Pietro's sauce

Directions:
Directions:
Preheat oven to 450º F.
Sprinkle chicken with salt and pepper.
Dip each piece of chicken in melted butter and then into bread crumbs.
Place in single layer in baking dish.
Bake 16-18 min.
While chicken bakes, prepare sauce.
Ladle sauce over chicken and serve.
 

Pietro's Sauce

2 c chicken stock or broth
1 c dry white wine
2 t lemon juice
1/2 c butter (1 stick)
1/2 c flour
1/2 t pepper
1 1/2 c sliced mushrooms

Directions:
Directions:
Bring broth, wine and lemon juice to a boil in pan on stove.
In another skillet, melt butter.
Whisk in flour to make a roux.
Add to broth, stirring constantly, until thickened.
Reduce heat to low; add pepper and mushrooms.
Cook about 5 min., stirring.
 

Veal Pietro

Ingredients:  
1 lb. thinly sliced veal cutlets
salt, pepper, flour
1 egg, beaten
1/2 c Italian bread crumbs (Panko)
1 1/2 c sliced mushrooms

Directions:
Directions:
Season with salt and pepper to taste.
Coat in flour.
Dip in egg, then crumbs.
Add veal to skillet with enough oil to cover bottom of skillet.
Brown veal, about 3-5 min. per side.
Add veal to serving bowl.
Spoon sauce over.
