BATTER:
1½ c. fresh blueberries
1 pkg. of white cake mix
1 pkg. instant vanilla pudding
4 eggs
½ cup oil
¾ cup milk
1 tsp. vanilla extract


STREUSEL TOPPING:
½ c. flour
1 tsp. cinnamon
¼ c. brown sugar
2 Tbsp. softened butter
¼ c. chopped nuts (optional)

Directions:
Set oven to 350°.
With electric mixer, beat together all of the batter ingredients (except for blueberries) for approximately 3 minutes until well blended and smooth. Fold in the blueberries at the end. Prepare streusel topping. Fill muffin cups 3/4 full and top with streusel topping or sprinkle with sugar. Bake for 20 to 25 minutes til toothpick inserted in center of muffins come out clean when poked!

FYI: If you want to have some variations;
Add about 1 tsp. lemon or orange zest into batter before baking.
Using almond extract instead of vanilla works great too.
