3 lbs. chicken wings
1 cup water
1 cup soy sauce
1 cup sugar
¼ cup pineapple juice
¼ cup vegetable oil
1 tbsp. minced garlic
2 tbsp. minced fresh ginger or paste

Preheat oven to 350º

Rinse wings and pat dry with paper towel. Combine all ingredients in a 9 x 13 baking dish. Arrange wings in marinade and refrigerate, covered, for over an hour or overnight. Place cooling rack in a jelly roll pan lined with foil. Arrange wings on rack and bake uncovered for 50 minutes, basting twice with marinade. To serve: Boil 1 ½ cups of marinade to boiling. Pour into chafing dish and add wings. Toss.
