Strain large can crushed pineapple. Add enough water to juice to make 1-1/2 cups.
Heat to boil. Add 1 pkg. lemon jello. Stir until dissolved. Add 1/4 cup sugar,
1/4 tsp. salt and 2 tbsp. lemon juice. Chill until slightly thickened. Add pineapple and
1 cup finely grated carrot. Whip 1/2 pint whipping cream stiff. (I prefer using sour
cream) fold into gelatin. Pour into 8" mold or 1-1/2 quart. Chill until firm.
