Ingredients: 3 lbs. lean short ribs of beef salt and pepper, flour, fat 1 cup thinly sliced onion 1 clove garlic 1-1/2 cups hot water 1/4 cup vinegar 2 small bay leaves 3 tbsp. brown sugar 1/3 cup catsup 1/2 tsp salt

Directions:Remove excess fat on short ribs. Sprinkle with salt and pepper and roll in flour. Brown well in several spoonfuls of hot fat in skillet. Put meat in dutch over or heavy pan with a cover. Add onions and garlic to fat in skillet and cook until soft. Pour over Ribs. Combine remaining ingredients and add to meat. Cover and cook slowly, 2-1/2 hours or until done. Check occasionally and add a little water if necessary. Remove ribs to serving plate and keep warm. Remove bay leaves, skim fat off top of gravy. Make a thickening by blending 2 tbsp flour with 1/2 cup cold water and stir into gravy. Bring to boil and cook 10 minutes. Pour over ribs and serve with hot cooked bread, noodles or rice. |
