6 Tbsp of softened butter
⅓ cup of granulated sugar
½ cup of brown sugar, lightly packed
3 Tbsp honey
2 tsp vanilla
½ tsp of Espresso Powder
1 Tbsp cider vinegar
1 large egg
½ tsp baking soda
½ tsp baking powder
2 cups of flour
2 to 3 cups of semi sweet chocolate chips ( can use part dark chocolate chips)

Pre heat oven to 350º. Line baking sheets with parchment.
In bowl of mixer, beat together butter, sugars, honey, vanilla, espresso powder until smooth. Beat in vinegar, egg, soda, baking powder. Stir in flour and then chips.

Drop by 1in. balls, or use small scoop. Bake for 10 - 11 minutes until bottoms are starting to brown. They will appear under done. Allow cookies to sit on cookie sheet for 10 min. and then move to rack.
