Olive oil flavored cooking spray
1 1/2 T. finely chopped onions
1 1/2 c. Instant White Rice
1 c. fat-free, lower-sodium chicken broth
1/4 tsp. salt
1/8 tsp. black pepper
1/4 c. sliced almonds, toasted
1 T. chopped fresh parsley (optional)

Directions:
Directions:
Heat a medium saucepan over medium heat and coat pan with cooking spray. Add onions, sauté 1 minute or until crisp-tender. Add rice, sauté 1 minute.

Stir in chicken broth, salt and pepper. Bring to a boil; reduce heat and simmer 10 minutes or until rice is tender and liquid is absorbed.

Add almonds and, if desired, parsley; fluff with fork.
