2 cups plain flour
6 tsp baking powder
3 ml salt
6 eggs, separated
1.5 cups unsalted butter
1 tsp almond
1 cup of orange juice
1 cup fine semolina

3 cups of sugar
2 cups of water
60 ml brandy

1. Heat oven to 350

2. In a bowl, sift together the flour, baking powder, and salt

3. In another bowl, beat the egg whites until frothy with either an electric mixer or a big
balloon whisk
Gradually beat in a half cup of sugar
Continue beating until very stiff and glossy, like meringue
Set aside

4. In another bowl beat the egg yolks, remaining half cup of sugar and the butter until
light and fluffy
Stir in the orange rind
Beat in the dry ingredients alternately with the orange juice & semolina

5. Carefully sold in the meringue

6. Turn into a greased oblong cake tin and sprinkle with almonds

7. Bake for 40 minutes

1. In a saucepan, boil sugar and water for 3 min
Add brandy

2. Pour hot syrup over warm cake when it comes out of the oven
3. Let i cool in the tin
4. Cut into squares.
