1 C dry quinoa cooked with 2 C liquid
1 5 oz container arugula (may not need full container)
1 can black olives, drained and sliced
1 red bell pepper, diced
red onion, diced
1 can black beans
1 cucumber, diced
C pine nuts
1 container grape tomatoes, cut in half

Garlic Expressions Salad dressing to taste

Directions:
Directions:
Cook quinoa as directed (bring to boil and simmer for ~15min). Cool before adding to salad
Chop veggies and toss with Garlic Expressions (~1/3 of bottle); add to quinoa when cooled. Add arugula and toss.

Be sure to allow time for quinoa to cool. Make in advance, night before.
