1# ground beef or venison
1# package frozen mixed veggies (peas, carrots, corn, green bean mix)
1 C diced onions
C diced green pepper
4-6 diced potatoes
46oz V8 juice or tomato juice (Spicey V8 for some zip)
Salt and pepper, Chili powder to taste

Directions:
Directions:
Saute onions and peppers in stock pot or Dutch oven. Add spices, V8 juice and potatoes. Bring to boil and simmer for 20min, until potatoes are cooked.
Add bag of mixed veggies and simmer another ~30min to thicken and thoroughly heat veggies

My kids loved this soup! We named it "Red Soup".
Great way to sneak LOTS of veggies into a kid.
