1/2 banana
1 egg
1 tsp coconut oil
1 tsp honey
1/3 cup oats, ground
1/2 tsp baking powder
1/2 tsp cinnamon
3 small strawberries, washed and chopped
2 tbsp chopped walnuts

Directions:
Directions:
1. In a mixing bowl - mash banana and whisk with coconut oil, honey and egg.
2. Add baking powder, ground oats, cinnamon. Mix.
3. Add strawberry chunks and chopped walnuts.
4. Cover the surface of a non-stick pan with coconut oil. At medium to medium-high heat, using a spoon, pour the mixture forming palm-sized pancakes (I used a small pan, made 3 pancakes per batch).
5. Cook until bubbles come up on the surface and the mixture is not liquid (about a minute), then flip and cook for 30s-1min. Put on a plate and repeat for another batch.
6. Top with your favorite toppings! My choice was 1 tsp honey & strawberries.
