1 deep dish pie shell 9"
3/4 c. granulated sugar
1/2 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/4 tsp. ground cloves
2 eggs
1 3/4 c. (15 oz. can) solid packed pumpkin or 2 c. fresh pumpkin
1 1/2 c. (12 oz.) evaporated milk

Directions:
Directions:
Combine sugar, salt, cinnamon, ginger and cloves in a small bowl. Beat eggs lightly in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk. Pour into pie shell.
Bake in preheated 425ºF oven for 15 minutes. Reduce temperature at 350ºF. Bake for 40-50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or chill. Do Not freeze as this may cause filling to separate from crust.

for 2 shallow pies: Use 2 -9" pies. Bake 425º oven for 15 minutes, Reduce temp to 350º and bake for 20-30 minutes or until done.
