4-8 medium russet potatoes (roughly 9oz each)
2 tbsp olive oil
Kosher salt
Ground black pepper

Directions:
Clean the potatoes under running water and Pierce with a fork.

Place one cup water and a trivet in the pressure cooker. Place potatoes on top of trivet. Cook on high pressure for 12 minutes and 10 minutes natural release. Adjust time depending on size of potatoes, 20 minutes for extra large, etc. After 10 minutes of natural release, release remaining pressure and open lid.

Optional: preheat oven to 400. Coat the cooked potatoes with olive oil and place them on a baking tray. Season with kosher salt and pepper. Bake 10-15 minutes to crisp skin.
