Ingredients: 1 16 ounce box of Spiral (corkscrew) pasta noodles 1 bottle of zesty Italian dressing (I use Wishbone)
1 block of Colby Jack Cheese. (Sometimes you can find this precut into cubes) 2 cups shredded parmesan cheese (sometimes I'll use Romano) 1 English cucumber. (Sliced, then cut slices into 1/4 triangles) 2 cups Cherry tomatoes. Quarter each tomato 1 Bell Pepper chopped into bite-size pieces. Any color Bell Pepper will do. 1 Red or Yellow Onion. Chopped into bite-size pieces. 1 can of sliced olives

Directions:Boil a large pot of salted water. Once water is boiling, cook pasta according to package directions. Drain water and run cold water over the pasta to cool. Put pasta in a large bowl. Pour about 1/4 of Italian dressing over pasta. Place in the refrigerator to cool while chopping vegetables.
Cut English Cucumber into 1/4 inch slices. Cut each slice into 1/4 pieces. Dice Cherry tomatoes quarters. Chop Onion into bite-size pieces. Chop Bell Pepper into bite-size pieces. Drain sliced olives. Chop the block of Colby Jack Cheese into cubes
Remove pasta from the fridge. Dumb all your chopped ingredients over the pasta. Pour Italian Dressing over the top. (to taste, but often times I'll use the whole bottle). Top with shredded parmesan cheese. Mix well. Place back into the refrigerator until ready to serve. Serve cold.

Notes: This recipe is so easy! My college roommates and I came up with this side dish when we needed something in a hurry. We already had these items. So we collaborated and It was a hit. Feel free to add or remove ingredients to your liking. I personally don't love olives so I usually leave them out.
I think the secret to this pasta salad is the Wish-Bone Italian dressing. Buy the Robusto or Zesty for added flavor.
