2 lbs potatoes
1 c flour
1 whole egg
1 extra yolk
2 tbsp butter
1 tsp salt
grated parmesan cheese
tomatoe sauce

Directions:
Directions:
Boil potatoes until cooked, peel and place thru ricer.

While potatoes are warm, blend with flour. Add egg and yolk and butter and salt. Place on floured board and knead lightly. Keep dough soft, roll into 1"thick about 10-12"long and then cut into 3/4" pieces. Dent with fork.

Place gnocchi in boiling salted water and cook until they rise.

Place in bowl, sprinkle with cheese and salt and eat ASAP! DELICIOUS!!!
