1 1/2 lb bacon (not necessary to use, but delicious)
1 c green onion chopped
1/2 c parsley
2 tbsp salt
1 tbsp bk pepper
1 1/2 c olive oil
1 1/2 c pecorino cheese grated
1 1/2 c parmigiano cheese grated
10 c breadcrumbs
6 slices lemon - to be placed on top of finished stuffed artichoke

Slice pointy end of artichokeand rub with lemon to prevent browning. Slice off the stem of each artichoke so they can sit up straight. Fry bacon until crispy and drain. Crumble in a bowl and mix in breadcrumbs, add grated cheeses and green onion, parsley, garlic and seasoning. Salt each artichoke before stuffing. Turn upside down to allow water to drain. Spread the leaves and pack in a generous amount of stuffing. Fill pot or tin with water about 1 1/2" above artichoke, pour olive oil over each one and let it seep in and top w lemon slice. Bring water to boil and over, lower heat, cover and steam until leaves pull off easily. Check water level after about 25 minutes and add more if necessary. ENJOY!
