Bone in rib roast
1 bottle of red wine
4 c. beef broth
2 T. olive oil
2 T. roasted garlic
2 T. fresh rosemary
2 T. fresh thyme
1 T. kosher salt
1 t. pepper

Sour Cream and Horseradish

Allow meat to sit at room temperature for at least an hour prior to cooking
Preheat oven to 450º ensure rack allows for roast pan to be in the middle of the oven.
Take several blubs of garlic and wrap in foil, bake in oven for 10-15 min or until soft Using a roasting pan with a rack, add 2 c. wine and 2 c. beef broth in the pan. Reserve the remaining wine and beef broth for later. Set Roast on rack, rib side down, fat up. Mix olive oil, garlic and herbs together. Spread over roast. Sprinkle with salt and pepper.
Insert meat thermometer into meaty part of roast. Roast at 450º for 20 min, then reduce heat to 350º and continue cooking until internal temp reaches 125-130º. While the roast cooks add 2 c. broth and 2 c. wine to a medium saucepan and simmer on low until reduced by half, then set aside for Au Jus.

Remove the roast and transfer to plate, cover with foil and a dish cloth to keep warm. Roast will continue to cook. Let in rest for 15-20 min. While the roast in resting prepare the Au Jus, I remove most of the fat and add the beef juices to broth and wine reduction pan. For extra favor I add a Au Jus mix and let it cook while the popovers are cooking.
Roast generally take 15 per pound of cooking time. A meat thermometer is a must.

My husband's favorite meal when we went out to dinner was Prime Rib. So I thought I'd try to make a Prime Rib for Christmas Eve Dinner with the help of a co-workers husband that was a chef, it came out great and my husband said it was the best prime rib he ever had. Since then we always have Prime Rib on Christmas Eve.
