2 c, water
2 c. sugar
1 pound fresh strawberries, chopped
1 oz. fresh mint
2 c. tonic water or club soda, chilled
1/4 c. fresh lemon juice
GARNISH: fresh strawberries, fresh mint, lemon slices

Directions:
Directions:
In a large saucepan, combine water and sugar over medium-high heat, stirring constantly until sugar dissolves.
Add chopped strawberries and bring to a simmer.
Reduce heat to medium and cook for 15 minutes.
Remove from heat and add mint.
Cover and steep for 15 minutes.
Strain syrup, discarding solids.
WHEN READY FOR DRINKS: In a pitcher, combine the strawberry simple syrup, tonic water or club soda, and lemon juice. Stir gently to combine.
Serve over ice. Garnish with fresh strawberries, fresh mint, and/or lemon slices.
