Minestrone Recipe

1 T olive oil
1 head cabbage
1 lb celery
1 lb carrots
1 lb onions
2 cloves of garlic, diced
2 - 28 oz cans crushed tomatoes
3 cans cut green beans
1 can garbanzo beans
2 cans chicken broth
3 zucchini
1 lb potatoes
1 cup chopped parsley
2 T sal
2 T pepper
2 T oregano

You will need two soup pots. Divide all ingredients between the two.

Chop cabbage, celery, carrots and onion. Saute in olive oil for 15-20 min. Add diced garlic.

Add crushed tomoates, green beans, kidney beans and garbanzo beans. DO NOT DRAIN THE BEANS.

Add chicken broth. Let cook for 15-20 minutes.

Cut up zucchini and potatoes and add to pot. Add parsley. If soup is too thick add more chicken broth or water.

Simmer for 30-45 minutes.

Add salt, pepper and oregano.

Serve with grated parmesan cheese and Italian bread.
