2 cups sugar
8 tsp. cornstarch
2 cups boiling water
1/2 freshly squeezed lemon juice
4 TBSP butter
2 tsp lemon zest (finely grated lemon rind)

Directions:
Directions:
Combine sugar and cornstarch in saucepan. Add boiling water and lemon juice. Stirring constantly, bring to boil and cook about 3 minutes, until thickened. Remove from heat and add butter and lemon zest. Refrigerate 4 hours.
