3 eggs
1 cup sugar
1/3 cup fresh squeezed lemon juice
1/4 cup butter
2 tsp fresh lemon zest (finely grated lemon rind)




Directions:
Directions:
Whisk above ingredients in double boiler and cook until thickened, about 7-10 minutes.
Then add butter and lemon zest. Refrigerate 4 hours to thicken. Store in refrigerator.
