Mike's recipe:

2 tbs butter or oil
1 envelope Lipton Onion Soup Mix
2-3 lbs beef short ribs (the Morissettes buy boneless ribs)
Cut each rib in half lengthwise

1 c ketchup
¼ c water
2 tsp yellow mustard
2 tbsp brown sugar (the Morissette's omitted this and said it was delicious)

Kathy's recipe:
5 lbs short ribs
S&P
3 tbsp veg oil
Mirepoix (aka 3 carrots chopped, 2 stalks celery, 2 med onions)
Bottle of full bodied wine (I used cabernet sauvignon)
1tbsp tomato paste (I use the "squeeze from the tube" kind and squeeze once around the pan)
2 bay leaves
3 garlic gloves
1 cup Tawney port
1 cup Beef stock or more for more coverage if needed

Mike's directions:
Heat oil in skillet and brown ribs on all sides then place in a crockpot.
Mix all remaining ingredients and pour cover the beef. Cook low for 6-10 hours

Kathy's directions:
Preheat oven to 350º

Add oil to large oven proof pot. S&P the ribs and brown on all 6 sides (don't cheat on this step, you want some browning bits on the bottom of the pan)

Remove ribs and brown mirepoix. Once slightly brown, add the tomato paste, stir

Add bottle of wine and reduce (which needs to be at a boil)

After reduction, add port wine, stock, and bay leaf

Add meat, cover and place in oven for 3 hours

AUNTIE KATHY HAS TO ADMIT THAT THE DIRECTIONS OF MIKE'S TOOK LESS TYPING THAN MINE. I'M GONNA HAVE TO TRY HIS.

Both the Morissette and Socha recipes were served with mashed potatoes and roasted vegetables.
