2 cups flour 1 cup butter (or margerine)

1 tsp. sugar 4 Tablespoons ice water


Mix flour, butter, sugar, with a pastry cutter until it looks like cornmeal'

Slowly add ice water until it sticks together. This dough is hard to handle but do not
add any more water.

To blind bake shell, cover shell with foil, add weights, bake at 400º 10-15 minutes.

If using food processor, pulse to combine flour and sugar.

Add butter in small pieces, pulse until it looks like cornmeal.

With processor on, slowly add water until mixture forms a ball.

Chill dough 20 minutes before rolling out on well-floured board.
