6 to 8 Chicken Breast
1 lg Can Cream of Chicken Soup
1/2 cup Sour Cream
1 Tube Ritz Crackers (Crushed)

Optional
1 Cup Shredded Mild Cheddar Cheese
2 Tbsp Poppy Seeds

Topping
1 Tube Ritz Crackers (Crushed)
1 Stick Butter (frozen cut in squars over crackers or melt and pour over crakers)

Directions:

Preheat oven to 350º.
1. Cook and chop the chicken in small chunks. (Optional: food processor)
2. Place chicken in large bowl and add Chicken Soup
3. Mix in sour cream
4. Add 1 tube crushed Ritz crackers
5. Mix well and pour in a casserole dish
Optional: Add Cheese and/or poppy seeds and mix well

Topping: Sprinkle crushed Ritz crackers over the chicken mixture. Cut frozen butter in thin squares and place over the the crackers or melt butter and drizzle over the cracker.
bake for 20 minutes or until golden brown and bubbly.

Poppy Seed Chicken Casserole was the signature Ross Road dish to take to the sick or new parents. We received our firs when Zachary was born and it is now a Bobo signature dish love by all four of the children. This is a weekly dish with corn and spinach.
