"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Directions:
Prepare all before cooking: sliced or shredded cabbage, garlic, onion, sage, thyme,
cut meat (bite size pieces) and veggies.
Bring a pot of salted water to a boil for pasta. Drain & SAVE a cup of pasta water.

Heat a large skillet over medium-high heat with oil. Sauté/brown meat then remove.
Use same pan/skillet, Add shredded cabbage and onion, toss to lightly brown at edges, 3-5 minutes.(If needed, add a small amount of starchy water or oil) Add garlic, sage and thyme; toss, add veggies, cooked meat, cooked pasta, butter and some starchy water to cover bottom of pan, enough to simmer so won't burn. Continue tossing until all mixed & veggies are close to done. Adjust salt and pepper to your taste. Grate fresh nutmeg on top of skillet dish. Reduce heat to keep warm.

Add Grated Parmesan to individual servings.

Personal Notes:
Personal Notes:
*I use tiny pasta shells
*I buy fresh sage and thyme.
* whole nutmeg (in spice area). Need small grater.
