¼ c. blue cheese
¼ c. walnut
¼ c. honey
1 tbsp. Sriracha hot sauce
4 slices sourdough bread
4 oz. brie, rind removed
1 green apple, cored and thinly sliced
½ c. arugula, roughly chopped, divided
4 tbsp. butter, divided
Directions:
Directions:
In a blender or food processor, combine the blue cheese, walnuts, honey and hot sauce until smooth.

Spread Brie on 2 slices of bread and top evenly with apple slices and arugula. Spread the blue cheese mixture on remaining slices and close to make two sandwiches.

Heat nonstick skillet or griddle over medium heat. Melt 2 tbsp. butter in the pan and cook sandwiches until golden brown, pressing down gently with a spatula. (Put a lid on the skillet.)

Add remaining butter to pan and carefully flip sandwiches, cooking until cheese has completely melted - about 5 minutes. Remove sandwiches from heat and wait about 1 minute before cutting.
