1 tbsp. unsalted butter
1 c. chicken stock
2 lb. potatoes, peeled & sliced thin
2 cloves minced garlic
1 c. half and half
1 tsp. salt
tsp. nutmeg
Sprinkle of pepper
2 c. shredded cheese (white Cheddar or Swiss), to taste

Coat baking dish with butter. In large skillet, simmer stock and potatoes over medium heat about 2 minutes. Stir occasionally. Combine all other ingredients and add to skillet. Bring to simmer. Stir frequently for about 1 minute.

Pour in dish. Layer potatoes, forming into one layer. Bake 75 minutes at 350 or until top is brown and potatoes are tender. Sprinkle shredded cheese on top.
