4 - 6 lbs. leg of lamb
6+ strips of bacon
Salt & pepper
2 - 3 chicken bouillon cubes
3 - 4 tbsp. flour

Directions:
Directions:
Rinse leg of lamb under water and put in roasting pan with the fat side up. Add ½ inch or so of water and salt and pepper. Lay bacon strips across the top but don’t let them touch the bottom of pan. Don’t baste but keep water in pan.

Bake at 350º. The internal temperature of meat should be 140 -145º for medium well. Please note that the lamb should rest after being taken out of the oven and can rise up to ten degrees in temperature if it rests for 10-15 minutes).

FOR GRAVY: Use the roasting pan in which you cooked the lamb, add 2 chicken bouillon cubes to the drippings and place on low heat on top of stove. In jar, place flour, salt, pepper, cold water (must be cold!) and shake until completely combined. Add this to the drippings in the roasting pan. (Heat should be low; if too high, the flour will clump).

Continue on low heat and stir until thickened. (Temp can be increased to thicken gravy - takes approximately 15 minutes.) If gravy is too thick, add potato water (if cooking potatoes - otherwise use regular water).

Since the lamb has a lot of rendered fat, use a ladle or large spoon to skim the fat off the top of the gravy.
