"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Directions:
1. Whisk vinegars, salt, and pepper in small bowl. Gradually whisk in the oil a little at a time until the dressing emulsifies. You can save unused vinaigrette for later.

2. Toss the greens and sorrel in a large bowl with as much vinaigrette as you desire. Add nuts, goat cheese, and berries, and toss very gently to distribute.

Personal Notes:
On the day of Shadow and Angie's wedding, I was honored they asked me to prepare a light lunch for them. The day before, Robin showed me the sorrel growing at the base of redwood trees in the grove. So with sorrel freshly foraged from the redwood grove, sprigs of dill growing near the barn, and an assortment of berries and other goodies at the farm, I made this salad for them. Sorrel is a magical plant that tastes like lemonade!
