1/4 cup unsalted butter
6 sprigs fresh thyme
1 bay leaf
5 lbs onions vertically sliced (about 16 cups)
1 tbsp sugar
4 tbsp all purpose flour
6-8 cups beef broth
2 tbsp red wine vinegar
1 1/2 tsp kosher salt
1 tsp pepper
24 (1/2 oz) French bread slices
5 oz Gruyere or Swiss cheese (about 1 1/4 cup shredded)

Place butter, thyme, and bay leaf in bottom of 6 qt slow cooker; add the onions. Sprinkle with sugar. Cover and cook on high for 8 hours. Remove thyme and bay leaf and discard. Stir in the flour and cook and stir for 1-2 minutes. Stir in beef stock, vinegar, salt and pepper. Cover and cook on high for 30 mins. Arrange bread single layer on 2 baking sheets. Broil 30 secs til browned. Place bowls on baking sheets. Place 1 cup soup in 12 bowls and top each with 2 bread slices and 2 tbsp cheese. Broil 2 mins until cheese melts. Repeat til all soup is cooked with bread and cheese.

Make this full batch and serve what you need and freeze the soup (without croutons or cheese) in containers or freezer bags. Freeze up to 3 months. When ready to eat, defrost soup in the refrigerator overnight.
