1 lb ground venison
1/2 lb cooked bacon, crumbled or chopped small pieces
1 sm onion, minced
1/2 tsp grated lemon peel
1/8 tsp thyme
1/8 tsp marjoram
1 egg
1/2 cup breadcrumbs
Salt and pepper to taste

If pan frying you will need 4 tbsp Worcestershire sauce and 2-3 tbsp butter

Mix all ingredients together and form into patties. Place on grill or pan fry in Worcestershire sauce and butter. Serve on toasted buns.

Venison is usually ground with 10-15 percent beef fat. The amount of fat will determine how well burgers hold together when making patties.
