Ingredients: 1 boneless, skinless whole chicken breast, poached, cooled, cut into thin julienne strips 5 oz boiled or baked ham, sliced, cut into thin julienne strips 1 bunch scallions, cut into julienne strips 1 lb snow peas, strings removed, blanched in boiling water for 30 seconds, submerged under cold running water, cut lengthwise in half ½ cup coarsely chopped walnuts ½ red bell pepper, seeded, cut into thin julienne strips ½ yellow bell pepper, seeded, cut into thin julienne strips 1 lb thin semolina vermicelli or Chinese wheat rice stick noodles, cooked al dente, drained, then submerged under cold running water until noodles are cool to the touch

Directions:Combine chicken, ham, scallions and walnuts in a large mixing bowl. Add the pasta
Heat vegetable, sesame oils and sesame seeds in a small saucepan over medium heat just until sesame seeds turn light brown
Remove from heat. Stir in coriander and soy sauce; mixture will crackle and sizzle.
Stir in hot sauce, if using. Optional: 1 diced chili, hot sauce to taste, or 2 tablespoons chopped cilantro leaves
Pour hot dressing over noodles and toss to coat evenly. Sprinkle with the cilantro leaves, if using.
Transfer the noodles to a serving bowl.
Refrigerate until cold, about 3 hours.
Makes 6 to 8 side-dish size servings or 4 Chinese-noodle-aficionado dinner servings
Takes about 30 minutes, plus 3 hours in the fridge |
