1 1/2 c. grated zucchini
1 1/2 c. self-rising flour
1 c. sugar
1/4 c. brown sugar
1/2 c. applesauce (I use my home canned applesauce)
2 eggs
1/3 c. vegetable oil
1/2 tsp. cinnamon
1 tbsp. pure vanilla

Preheat oven to 350º

Cream sugar, brown sugar, oil and eggs together with a stand mixer. Whisk flour and cinnamon together, in a separate bowl. Once creamed, add applesauce and zucchini and mix. Add flour mixture and vanilla. Mix just until the flour is incorporated. Pour into a loaf pan sprayed with baking spray. Bake 50-55 minutes, inserting a butter knife in the middle to see if bread is done.
