1 cup butter
1 cup sugar
1 cup brown sugar
2 large eggs
2 tsp. vanilla extract
1 tsp almond extract
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
2 - 2½ cups all-purpose flour
2 cups rolled oats
1 cup shredded coconut

Directions:
Directions:
Using a mixer, cream together butter, sugars, eggs, vanilla, and almond extract. Set aside. Mix all dry ingredients together in a separate bowl.
Add the dry ingredients to the wet ingredients and mix the batter well.
Spoon the batter onto a greased baking sheet

Bake at 350º for 8-10 minutes

Preparation time 45 minutes. Makes 24 cookies.

These Coconut Oatmeal Cookies are so soft, chewy & tasty! Adding a cup or so of dried cranberries makes them especially awesome!!!
