2 cups Flour
1 teaspoon of: Baking Powder, Baking Soda and Cinnamon
1/2 teaspoon Nutmeg and salt
1/4 cup Cocoa
3 Eggs
2 cups Sugar
1/2 cup Oil
3/4 cup Buttermilk
2 cups Shredded Zucchini (about 3-4)
1 cup Chopped Nuts
1 teaspoon Vanilla
1 teaspoon Grated Orange Peel

Stir together flour, baking powder, baking soda, spices, salt and cocoa. Set aside. In large bowl, beat till light edge. Gradually beat sugar until light and fluffy and pale.
Slowly beat oil. Stir in flour mixture 1/3 at a time alternating with the buttermilk and zucchini. Blend lightly but thoroughly. Stir in walnuts, vanilla, and orange peel. Grease
13" x 9" x 2" pan. Bake in 350 F oven for 50-60 minutes. Can also be made in loaf pan, but increase time baking.
