Ingredients: 1 large eggplant, sliced lenghtwise 1/4 inch slices
1 large onion, finely chopped 2 Tbsp olive oil 1 lb ground lamb 1 tbsp dried oregano 1 tsp ground cinnamon 1/2 tsp black pepper 1/2 tsp ground nutmeg 1/2 tsp paprika (regular, hot or smoked) 1 cup red wine 1 tbsp beef broth concentrate 1 14oz can fire roasted diced tomatoes 1 tsp sugar
1 large russet potato, sliced lengthwise (or 2 med)
4 Tbsp dried bread crumbs
Cheese topping: 3/4 cup (6 oz) Greek Yogurt 3 large eggs, room temperature, beaten 1 Tbsp all-purpose flour 1/2 cup cream cheese (Tofutti cream cheese) 3 oz crumbled feta cheese

Directions:1. spread eggplant into single layer and salt. after about 30 minutes, pat dry and grill or broil. 2. Saute onion in olive oil about 5 minutes, add the ground lamb and cook stirring until browned. Drain excess fat and return to pan. Add oregano, cinnamon, pepper, nutmeg and paprika. Stir to coat meat. Add wine and beef concentrate, bring to a boil for 1 min. Stir in tomatoes and sugar. Reduce heat and simmer for 30 minutes. 3. Slice potatos into about1/8th in slices lengthwise. boil them in plenty of water until soft and breakable. Drain and set aside. (I bring potatoes to a boil,cover pot with its lid and set off the heat for 20minutes) 4.When ready to cook, preheat oven to 350ºF. Lightly oil 91/2" x 13" baking dish. Layer eggplant slices on the bottom. Add the meat sauce and spread to cover eggplant. Layer the potato slices to cover the meat sauce. Sprinkle withe the bread crumbs. 5. Mix the cheese topping ingredients together and pour over bread crumbs and smooth out. 6. Bake for ~45 minutes. Remove from oven and let set for about 7minutes before cutting into squares to serve. Enjoy. |

Notes: Steps 1,2 and 3 can be made a day or several days ahead of time and stored in separate containers in the refrigerator. When ready to assemble, remove from frig and allow to come to room temperature.
