1 cup packed brown sugar (I prefer dark but light will work)
7 tbsp. vegetable oil
2 large eggs
1⅓ cups mashed ripe banana (about 2 large)
1 cup regular oats
cup milk
2 cups all-purpose flour
1 tbsp. baking powder
tsp. baking soda
tsp. salt
tsp. ground cinnamon

Directions:

1. Preheat oven to 350.
2. Combine first 3 ingredients in a large bowl; beat well at medium speed. Combine banana, oats and milk; add to sugar mixture, beating well.
3. Lightly spoon flour into dry measuring cups, level with a knife. Combine flour, baking powder, baking soda and spices in a medium bowl and stir with a whisk. Add to sugar mixture; beat until just moist.
4. Spoon mixture into a 9x5 greased loaf pan. Bake at 350 for 1 hour and 10 minutes.
5.. Cool 10 minutes in the pan on a wire rack. Remove from pan. Cool completely on the wire rack. Once cooled, it can be frozen.

There are lots of banana bread recipes out there but this one is unique with the addition of the oatmeal which adds fiber and a healthier feel.
