1 lb. ground beef or turkey
1 onion, chopped
4 cans of beans (mixture of kidney, great northern, pintos - any kind you like)
2 cans of corn
2 14-oz. cans of tomatoes - can use one Ro-tel and one regular - depends on how
spicy you want it. I usually use plain since I'm adding chilies anyway
1 4.5 oz. can chopped green chilies - can use part or all of can, again depends on how
spicy you want it - I use mild or fire-roasted chilies (they’re milder)
1 8 oz. can tomato sauce (optional)
1 pkg. Ranch salad dressing/seasoning mix
1 pkg. taco seasoning

Brown ground beef or turkey, then drain off fat. Add onion and cook for a couple of minutes, then add remaining ingredients. I drain and rinse the beans before adding. The original recipe doesn't call for water but I always add some - 1-2 cups depending on how much liquid you want it. Simmer for 30 minutes.

Serve with grated cheese, sour cream, and corn chips.
