2 c. sliced strawberries
2 c. chopped rhubarb
1 c. sugar
1/4 c. minute Tapioca
1 tsp. vanilla
1/2 stick of cold salted butter, cubed
2 ready made pie crust or your own homemade pie crust
Clear sprinkles

Directions:
Preheat oven to 400
Cap, wash and slice strawberries. Wash and chop rhubarb. In a mixing bowl, add strawberries, rhubarb, sugar, Tapioca, vanilla, and butter; stirring to combine. Place one of the ready made pie crust into a deep dish 9 in. pie plate. Add the pie mixture, and place the second pie crust, sealing in the edges. Sprinkle top of the pie with clear sprinkles for an added sweetness and crunch. With a knife, cut slits into the pie crust to allow air to escape. Bake pie 45-50 minutes. Cool completely before serving.

Using an egg slicer to slice strawberries cuts down on your prep time, and insures the strawberries are evenly sliced.
