2 c. diced cooked Chicken
2 cans diced green chilies (4 oz cans)
1½ c. shredded Mexican blend or Monterey Jack Cheese
½ c. Bisquick Gluten Free Mix
1 c. Milk
3 Eggs
¼ c. Green Salsa or Taco Sauce

Directions:

Preheat oven to 400ºF. Spray 9" pie plate with cooking spray.

In pie plate, layer chicken, green chilies, and cheese. In medium bowl, mix Bisquick, milk, eggs and salsa until blended. Pour over ingredients in pie plate. Bake 25 to 30 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving.

I made up this recipe based on the Impossibly Easy Chicken Club Pie, dad likes this version better. He adds sour cream and salsa on top when serving.
