1 lb ground beef
10 small soft corn tortilla shells
4 cups shredded cheddar jack cheese
2-3 10 oz cans of mild enchilada sauce
1 medium onion, chopped
2 small cans of sliced black olives
Sour cream for topping, if desired

Directions:
Directions:
Brown ground beef and drain. Layer ingredients in a 9x13 pan, as follows, repeating layers three times: First layer 3-3½ shells to cover bottom of pan. Cut shells into halves or quarters to make them fit better. Top with one third of the sauce (use sparingly), beef, onions, cheese and olives. Repeat this method until you have 3 layers and have used up all ingredients. Drizzle any remaining sauce over the top. Bake uncovered at 350º for 30 minutes. Top with sour cream when serving.
