Buy a corn beef (thick end) or smoke shoulder. Wash under cold water to wash off the surface brine.

Put into a pot of cold water and bring to a boil. Remove from stove and drain off water; wipe off the brine in the pot. Refill pot with meat. I put a can of beer in on the pot and then cover meat with cold water and let it come to a boil. Then lower the heat to simmer for 3 to 4 hours until tender.

Remove meat and add turnip and carrots, let cook for 1/2 hour. This take longer to cook than other vegetables.

Then add your cabbage and put your meat back in and cook until the veggies are tender.

I cook my potatoes in a separate pan (with skins on).

Sompe people put potatoes in but I think they get too mushy.
