9” pastry shell
5 cup sliced Vidalia (or sweet) onions
4 Tbsp butter
¾ tsp salt
3 eggs
⅔ cup cream
¼ tsp black pepper

Directions:
Directions:
Sauté onions in butter until tender and slightly carmelized. Arrange in unbaked pie shell
Beat eggs lightly; add cream, salt and pepper and beat. Pour mixture over onions.
Bake at 425º for 20-25 minutes or until knife inserted in center comes out clean

We use unsalted butter. We have used all types of onions. They all are good, although sweet onions are our favorite. Sometimes, we make this as a main dish with another vegetable(s) as a side. This can be made in small tart shells, if that works, as a means of serving.
