1 Leg of Lamb 6 - 7 pounds
Some flour
salt
pepper
1 medium onion, sliced
1/4 teaspoon rosemary

Directions:
Directions:
Rub the meat well with flour and sprinkle with salt and pepper. Place on a rack, fat side up. Place onion and rosemary in bottom of pan. Roast, uncovered, in a slow oven (325 ) allowing 3 minutes per pound. Remove to heated platter and keep warm while making gravy.

GRAVY: remove rack and pour fat from pan; return 4 tablespoons to pan. Blend in 4 tablespoons flour, then 2 cups of water. Cook, stirring constantly, scraping baked on juices from pan, until gravy thickens and boils for 1 minute.

Season, then strain into heated serving dish.
