"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:

In pot on stove add:
2 cups sugar
4 Tablespoons Karo Syrup
1 cup water
4 sticks of real butter

Bring to boiling point stirring constantly with a wooden spoon. Place thermometer in pan. Boil for about 1/2 hour as it rises to 278º. Immediately take the thermometer out and wash in hot water - (don't soak the thermometer because it will absorb the water)

(Heat two cookie sheets in the oven a little so that the candy will spread and not harden too quickly). Remove candy from heat and stir in 2 cups of slivered almonds. Pour out on buttered cookie sheets and spread out. Sprinkle chocolate chips on top and when melted spread to cover. Sprinkle finely chopped pecans over the top and let cool.
