4 pork loin chops, cut 1/2 inch thick - about 1 1/2 lbs. total
1 T. cooking oil
1/2 c. orange juice
2 T. soy sauce
2 T. vinegar
1 tsp. sugar
1/2 tsp. ground ginger
2 medium carrots, bias-sliced 1/4 inch thick
1/2 of a small onion, cut into wedges
1/2 of a medium green pepper, cut into thin slices

Trim excess fat from pork chops. In a large skillet quickly brown chops on both sides in hot oil. Remove chops from skillet. Drain fat from skillet.

Combine juice, soy sauce, vinegar, sugar and ginger. Add juice mixture to the skillet; stir in carrots and onion. Place chops atop vegetables. Bring to boiling. Reduce heat. Cover and simmer for 20 to 25 minutes or till pork is no longer pink. Add green pepper - recover and simmer for 3 minutes more.
