1 4 pound roast

1 slice of onion
salt and pepper
1 12 cup uncooked prunes
6 slices pineapple
2 stalks celery, sliced
3 or 4 pepper corns
1/2 teaspoon nutmeg
1/2 teaspoon paprika
1/2 cup pineapple juice

Directions:
Directions:
Insert onion in small slit. Sprinkle with salt and pepper. Brown on both sides for 15 minutes in 450º oven. Reduce heat to 300º and roast for 1 hour. Place fruit around roast. Add celery, peppercorns, nutmeg, paprika and pineapple juice. Continue roasting about 1 hour more. Serve fruit around roast.
